····· 10361116334

Lipid Oxidation in Seafood

für 44.10€ kaufen ···· Rheinberg-Buch.de - Bücher, eBooks, DVD & Blu-ray
Lipid oxidation is one of the key problems associated with the loss of quality of seafood. In the seafood industry, lipid oxidation is a serious problem, not only because it produce rancid odors and flavors, decreases shelf life and alter texture and appearance of foods, but also because it can decrease the nutritional quality and safety of seafood. It is the process by which oxygen reacts with unsaturated lipids present in the foodstuff. In the presence of an initiator, polyunsaturated fatty acids can become oxidized and form alkyl radicals. When exposed to oxygen, the alkyl radicals rapidly form peroxyl radicals and these radicals can react with more lipids to produce hydroperoxides. As a lipid hydroperoxide decomposes, it forms numerous volatile compounds such as hexanal and propanal, which impact the sensory quality of foods. Lipid oxidation in seafood can be mediated by enzymes like lipoxygenase, cycloxygenase and haem protein like haemoglobin and myoglobin. Oxidation of lipids is accentuated in the immediate post-slaughter period, during handling, processing, storage and cooking. This process leads to discoloration, off-odor and off-flavor development. ····· 10361116205

Promising compounds were then further studied in development, where their pharmaceutical properties, metabolism and potential toxicity were investigated. Here we present a study on herbal lead compounds and their potential binding affinity to the effectors molecules of major diseases like endometrial cancer. Clinical studies demonstrate a positive correlation between the extent of PDK1 and malignant progression of pre cancerous lesions in endometrial. Therefore, identification of effective, well-tolerated anti cancer inhibitor represents a rational chemo preventive strategy. This study has investigated the effects of naturally occurring compounds that inhibits the target. Our results reveal that these compounds use less energy to bind to the target and inhibit its activity than the commercial drugs used. Their high legend binding activity to the target introduce the prospect for their use in chemo preventive applications in addition they are freely available natural compounds that can be safely used to prevent disease. ····· 10361115975

Role of Cell Membrane Fatty Acids in Insulin Sensitivity

Diabetes mellitus is a complex of metabolic disease characterized by hyperglycemia , diminished insulin production, impaired insulin action , or a combination of both resulting in the inability of glucose to be transported from the blood stream into the tissues, which in turn results in high blood glucose levels and excretion of glucose in the urine, The cell functions involved in the action of insulin receptor binding enzyme and transporter activities are controlled by membrane properties . Fatty acids composition of membrane phospholipids are affected by the composition of the dietary fat .Changes in the fatty acids composition of erythrocyte membrane , which are easily accessible cells, reflects changes in that of membrane phospholipids of less accessible tissues . The fatty acids composition of cell membrane can influence membrane associated phenomena such as the interaction between insulin and its receptors. Thus it is from interest to study the relationship between cell membrane phospholipids fractions and their role in insulin action, also to study the role of omega-3 fatty acids in reducing oxidative stress in diabetic rats. ····· 10361115963

The world production of olive oil reach 2,800,000 ton and 98% of this production is to be found in the Mediterranean Basin, where this agricultural system has been developing for thousands of years, characterized by its adaptation to the environment and its empiricism. Virgin olive oil is consumed unrefined, although a great proportion of the olive oil produced has to be refined to render it edible. Refining treatments are needed to remove or reduce the content of minor substances that may affect oil quality, such as phospholipids, FFA, pigments, peroxides, traces of metals, herbicides and volatile components. Phenolic compounds are among the substances eliminated during the different refining steps. At present, three types of olive oils are intended for refining: lampante olive oil, olive pomace oil and second centrifugation olive oil. Lampante olive oil is obtained from fruits by mechanical means, but it has undesirable organoleptic or chemical characteristics that make it unfit for consumption. Platelets are central players in maintenance of hemostasis and blood clotting. They are highly sensitive cells exhibiting variety of functional responses depending on the stimulus. Platelets remain hyperactive` in thrombotic disorders like coronary artery diseases, stroke and diabetes mellitus playing a critical role in their pathogenesis. Thus investigation of platelet behavior under different conditions is an important area of investigation to retain these cells in their resting state. Here we explore comparatively less studied areas of platelet biology and attempts to elucidate the signaling mechanism during platelet storage for transfusion purpose, physiologically important process of fibrin clot retraction and upon exposure to most commonly used nanoparticles nanosilver as a model of foreign stimuli. Nanosilver retards platelet activation indicating its potential to be promoted as an effective anti-thrombotic agent, or use as a stent material, where its anti-bacterial and anti-platelet properties could complement each other.
